My iron rich salad is honestly one of my favourite recipes. Iron is a really important mineral involved in various bodily functions, including the transport of oxygen, and it’s essential for providing us with energy, something we all love!
This salad will provide you with 23% of your recommended daily intake of iron and the Vitamin C-rich lemon juice in the dressing will ensure that your body utilises it well.
Enjoy with grilled chicken breast, cubed tofu or tuna for a fabulous energy-rich meal that is completely delicious.
1 bunch parsley
1 large beetroot
¼ cup pepitas
Sea salt and ground black pepper
- Grate carrots and raw beetroot into a bowl.
- Add parsley, pepitas, the juice of a lemon and a drizzle of olive oil. Toss to combine.
- Season with sea salt and cracked black pepper and serve.
